Ingredients:
250g Spaghetti cooked and cut into small portions (roughly 1cm)
300g York Ham (or pick your favourite) cut in small cubes
2 large carrots cooked, peeled and roughly chopped in 1cm portions
2 eggs hard boiled (that's 7and a half minutes to 8 minutes......it helps to cool the eggs in cold water as soon as you take them off the cooker-this helps prevent the yolk blackening)
2 large tomatoes
125g of Mayo
Peas (petits pois)...the recipe did state what quantity but roughly 50g-100g
Lettuce leaves
Method:
Mix the pasta (already cooked and chopped) with the ham, the carrots, some of the peas and the mayo abit of salt and pepper would not go amiss either.
Place on top of some lettuce leaves, cover with the rest of the peas and decorate with slices of tomato and hard boiled egg.

LOL....i should have taken some shots of the inside.....FWIW I'm taking these recipes from a souped up Colombian foodie magazine.....the recipes are not particularly inspiring...those pictures I took actually look better than the ones printed in the glossy magazine.
The salad actually tastes fine, not very adventurous but this has always been my criticism of Colombian food in general.......take this salad for instance, I followed the recipe to the letter, but I know it could have tasted and looked ten times better.....the pasta and ham work well, but they could have added more than just carrots...I would have added some chopped avocado, a bit of cilantro, some dried chilli flakes and perhaps added a bit of mustard to the mayo to give it a bit of bite.
As for the presentation, I wouldn't have layered the top with the peas, but I would keep as the sweetness and crunchiness they provide work well with the salad, lastly I would have got rid of the tomatoes but kept the boiled eggs as I love boiled eggs.....I'll probably do this when I get time and post pics to compare and contrast....watch this space |
